Great Gyuto
Easy to use. I love the 210mm length. The blade is thicker than the Shibata Koetetsu's (Petty & Bunka) which gives it a very comfortable feel of strength.
A good confidence when cutting harder veggies or tougher pieces of meat.
This my knife and it gets washed immediately after use, immediately....
Hap40 may be rust prone so wash n Dry, no sitting around like the R2 steel knives that the family uses.
Flat belly for a Gyuto which helps with all cutting...I do not rock chop any longer so a round belly of a knife is a detriment for Me. All the knives in our house are now flat belly knives, only way to go.
