If you like, thin blades that cut like lasers then yer gonna love Mizu. This line is super thin and super affordable.
Masakage Mizu knives are handmade with Aogami carbon steel. Aogami is my kind of steel, super easy to sharpen, takes a brilliantly sharp edge, cuts like silk and is very rugged for it’s hardness. The extremely hard blue carbon steel core is laminated between softer layers of carbon steel. The Kurochi (black) finish of these knives is a result of hand forging. The blackness is burnt carbon on the surface of the steel. This is a very traditional look for Japanese knives. Have a close look at these knives you will see that the Kurochi finish is really blue-ish/black wich is a totally unique look to Masakge Mizu knives
These knives have been named Mizu (water) as the blue/black kurochi finish gives the impression of cold, deep water. Paired with an oval cherry handle these knives represent excellent bang for the buck. Because the blade is not stainless it requires a bit more care. Keep the blade dry to avoid tarnish and if you ever see a bit of rust on the blade remove it immediately with a coarse dish scrubber and soapy water.
Katsushige Anryu san is a 70 year old blacksmith with 52 years experience who works in Takefu Village. We are lucky to be able to work with such a skilled craftsman.
Masakage Knives are designed and selected by Kevin Kent of Knifewear and Shibata san, Hiroshima’s top knife sharpener. All are handmade in Japan by blacksmiths chosen for their excellence.
