Renowned Yasuki steel from the Shimane Prefecture was the material used in the making of fine Samurai swords. It is so rich in Carbon and Tungsten (1.3% & 1.5% respectively) that the forging and tempering process turns the outer layer of the blade black through oxidization. This is why the traditional Japanese Nakiri (vegetable knife) is black.
