Masakage Shimo knives are hand forged from Shirogami carbon steel. Shirogami is my kind of steel, super easy to sharpen, takes a brilliantly sharp edge and cuts like silk.
The super sexy Damascus steel is hand manipulated by Kurosaki san. To achieve this look he uses a hammer with an raised ‘X’ on the face. Cool huh? Paired with the white (magnolia) and black (pakka wood) octagon handle the overall balance and feel is what chefs desire.
Because the blade is not stainless it requires a bit more care. Keep the blade dry to avoid tarnish and if you ever see a bit of rust on the blade remove it immediately with a coarse dish scrubber and soapy water.
This series is named Shimo (frost) because the blade looks like frost on a window.
Yu Kurosaki is a 30 years old blacksmith working in Takefu Village. He has been a blacksmith for nine years and is truly committed to making better knives every time he works. He’s young, but awesome. Just look at how sexy these knives are.
Masakage Knives are designed and selected by Kevin Kent of Knifewear and Shibata san, Hiroshima’s top knife sharpener. All are handmade in Japan by blacksmiths chosen for their excellence.
