A note about measurements: Handmade Japanese knives can vary in their dimensions, so these measurements are only an example.
About the Shape -I like cutting bread with my Gyuto because it doesn’t make a lot of crumbs. But sometimes you need serrations to cut super crusty sourdough loaves or freshly baked French baguettes. This is really just for cutting bread, not your tomatoes! That’s what your other knives are for. The front serrations of this knife break the crust, while the straight edge takes care of the rest, without the crumbs! It also works great on roasts.
About Ryusen Prever - Ryusen Hamono was founded in 1948 as a knife sharpening company. They worked with companies like Takefu Special Steel as early as the 1970s to develop high-quality knives made with stainless steel, at a time when most other knife makers were struggling to produce decent stainless steel knives. Now, they have expanded their collection of knives not only having sharpness and longevity in mind but with a sleek modern design.
The classy Prever series carries the prestige of a luxury car, combining Japanese and European design elements into one elegant package. The VG10 stainless steel core offers top-notch performance without difficult maintenance, and the 66-layer damacus cladding takes it to the next level. The Canadian walnut handle featured a European-style bolster for extra heft.
