Konosuke Momiji - Trending

Konosuke Knives are a great little knife company based in Sakai, a suburb of Osaka. This knife is hand forged from VG10 stainless steel. VG10 has the qualities of carbon steel: capable of wicked sharpness, easy to sharpen, keeps a great edge and feels super silky BUT IS STAINLESS. Sounds like the future to me. VG10 was a steel actually designed for knife making. Clever idea. Check out the damascus pattern. It looks like finger prints. How cool is that?

These knives are finished with a Japanese style, octagon shaped maple wood handle with a Japanese buffalo horn collar. This is the traditional Japanese handle. This type of handle creates a knife with overall lightness and a blade forward balance. I love a light knife as one does not become fatigued with heavy use and they are more precise. These knives are also accompanied by a Saya: a traditional Japanese wooden case that provides an easy and classy method of storage.  

The Momiji (Japanese Maple Leaf) pattern is unique to Konosuke knives. Kawamura san has developed this technique, but keeps the details a secret. His results are stunning. All I can say is that the mirror polish is done by hand and much more work than I had first guessed.
