The designer of this set is the man who taught me to sharpen knives. Jayesh is a knife maker who designs knives for chefs. The fit, finish and balance are to a quality demanded by professional chefs. To understand the maker of these blades one must understand that Jay has a long grey pony tail and Woodstock has never ended for him. He calls the Damascus steel pattern "Staring into the Cosmos".
These beautiful blades perform as great as they look. The core steel is made from the knife makers steel of the moment, VG10. It is a newly developed high carbon (0.95 to1.05%) stainless steel renowned for it's long lived edge and durability. Molybdenum (0.9 to 1.2%) and Vanadium (0.1 to 0.3%) are added for their stainless properties and Cobalt (1.3 to 1.5%) for toughness. The charcters on the blade say "Made in Japan' "Forged in Echizen" "Dragon" and the makers signature.
