HIROMOTO - TENMI JYURAKU KNIVES

Tenmi jyuraku means "Joy of cooking with taste of heart" in Japanese and each blade is stamped with Japanese characters that say "heaven, taste, longevity, happiness". The Tenmi Jyuraku knives are the top line produced by the Hiromoto workshop.
These knives are hand forged in Seki Japan from a Yasuki Aogami Super (Blue Steel Super) central core and laminated with SUS-405 stainless steel to protect all but the cutting edge from tarnishing. Expert tempering & highly skilled hand forging provide stunningly silky edges which, with proper care, will provide a lifetime of excellent service to the discerning owner. Being extremely rich in Carbon (1.40 - 1.50%) Aogami Super is a breeze to re-sharpen with remarkable sharpness and edge retention, but is prone to discolouring or oxidizing. This natural patina that forms on the cutting edge is part of the beauty of using carbon blades an in no way affects the food being cut.
