BLAZEN
Rockwell Hardness 61:63
Echizen District is famous for hand hammered knives with a history reaching back 700 years. In 1337 sword-smith Kuniyasu Chiyozuru moved to Fuchu (Takefu) from Kyoto and brought his sword making expertise to the local blacksmiths.
Utilizing modern technology married with the Echizen tradition Ryusen has been producing blades of great renown. Blazen is the top of the line for chefs and keen cooks who seek top performance in the kitchen. The central core of high speed tool steel is hardened to 61:63 Rockwell for outstanding edge retention and extreme sharpness. The blade is light and feels like a precision instrument in the hand. Each knife has a traditional lacquered wooden sheath (saya). The handle is made from rugged silicone injected rosewood with a full tang and welded bolster.
Blazen knives with their thin blade and their extreme edge slice like few other knives. These are serious performers in the kitchen.
